I’m riddled with man flu, and in desperate attempts to shift it I’ve tried all sorts of ginger-lemon concoctions but to no avail. When I was little my mum would always have cans of rice pudding in the cupboard, and that is exactly what I need to help me now. Because I am sick you’ll have to excuse my lack of measurements, but all I did was throw a cup of pudding/paella rice into a saucepan over high heat. Pour some full fat milk over the rice until it covers the rice by about 1cm. Bring to the boil and add 1tsp vanilla, 2 green cardamom pods, a pinch nutmeg. Reduce the heat and allow to simmer, adding more milk as it reduces. When the rice is completely cooked add a tbsp clotted cream, 2tbsp sugar and serve!
