I recently saw someone’s ‘tweet’ asking for a recipe for christmassy brownies and so I immediately thought of hazelnuts. It isn’t a massive deviation from a normal brownie recipe, as most you find will call for chopped nuts, but it is enough to transform the normal chocolatey goodness of these gooey cretins, into something festive and rather uplifting.
ingredients
- 100g soft dark brown sugar
- 125g caster sugar
- 3 eggs
- 125g softened butter, or margarine
- 30g flour
- 60g good quality cocoa powder
- 1tsp vanilla
- 1tsp baking powder
- 50g dark chocolate, chopped into chunks.
- 50g milk chocolate, also chopped into chunks.
- 50g hazelnuts, chopped
method
- Preheat the oven to 150 degrees Celsius (fan), and grease and line a 10x8 inch brownie tin, or roasting tin.
- Simply put all ingredients into a mixing bowl, and if you have softened the butter properly, you can just mix until everything is amalgamated into a smooth, glossy batter.
- Pour into the prepared tin and bake for 25-30 minutes. Allow to cool completely before even considering removing it from the tin; this is a very fudgy brownie and so needs to solidify a little before being cut.
