ingredients (serves two)

  • 150g plain flour
  • 2 large eggs
  • 25g cracked black pepper

method 

  1. Simply place the flour and pepper into a mixing bowl and make a well in the centre. Add the eggs to this well and with a fork, whisk the eggs pulling the flour into them a little at a time. When all is mixed, place the dough onto a well floured surface and knead for a few minutes until smooth. Leave to rest, wrapped in cling film, for ten minutes.  
  2. When you are ready to use the dough flour your surface and rolling pin. Roll the dough out until it is approximately 3mm in thickness, remembering to pick the dough up and relax it as you go so to ensure it does not stick to the surface. 
  3. When rolled out, take a 2 inch fluted cookie cutter and cut the pasta into circles. When all the dough is cut, place your forefinger at the top of a circle, your thumb at the bottom, and pinch into the middle so that you end up with a little bow. Repeat this until you have a battalion of pasta bows.
  4. You can allow these to dry out, just left on the worktop. If so, they will take around 9 minutes to boil. If, however, you are using them immediately, they will only need around 4 minutes boiling time. However you do it, ensure that the water is well salted. 

Tip: if you have a pasta machine then this dough will do for any type of pasta you wish.
