Sometimes the simplest of recipes are the most delicious, and these muffins are just the perfect treat for a Christmas morning breakfast (though I could eat them every Sunday breakfast). There is a lot of vanilla in these, but that is what gives the doughnut like flavour.
ingredients (makes about 12 large muffins)
- 250g self raising flour
- 1 tsp bicarb of soda
- 125g caster sugar
- 250ml whole milk
- 1 tbsp vanilla extract (not the cheap nasty stuff)
- 125g butter, melted and cooled
- 2 large eggs
- 12 tsp strawberry jam (one for each muffin, so vary according to yield)
- Icing sugar to dust
method
- Line 12 hole muffin tin with muffin cases, and preheat the oven to 180 degrees C (fan).
- Sift together the flour, bicarb and sugar into a bowl. In a large jug mix together the milk, vanilla, butter and eggs.
- Pour the wet ingredients into the dry ingredients and fold in gently.
- Now add a tablespoon of the batter to each muffin case, then drop a teaspoon of the jam into the centre of each muffin. Finally divide the remaining batter between the muffin cases.
- Bake in the preheated oven for 20-30 minutes, or until a skewer inserted into a front muffin comes out clean. If your oven bakes unevenly you will need to turn the pan after 15 minutes.
- Once cooked, allow to cool completely then dust with a generous helping of icing sugar. You could add a little cinnamon to the icing sugar for an extra festive kick.
