Another perfect cocktail party snack are these tartlets. They can be eaten in one albeit considerable bite, yet the flavours are sophisticated enough for any party; swarve or simple.
ingredients
- 320g ready rolled short crust pastry
- 12 dried figs, each chopped into 4
- 150g goats cheese
- A little olive oil for drizzling
- 2 tbsp fennel seeds
- pinch salt and pepper
method
- Preheat the oven to 220 degrees C/200 degrees C fan.
- Grease 2 x 12 hole shallow muffin pans.
- Unroll the ready rolled pastry and using a plain cookie cutter, about 2.5 inches, cut out 24 circles. Place these into the tins.
- Place 2 pieces of fig into each pastry case, followed by about 1 tsp of goats cheese. Drizzle a little olive oil over each tartlet, and sprinkle with salt, pepper and fennel seeds. Bake in the preheated oven for around 20 minutes. Cool and serve with dip; I like a good chutney with these.
