Cocktail sausages, no matter how twee, should always be found on a cocktail party buffet. To omit them, would be like having christmas without a turkey (don’t get me started!) 

These also add a little Asian flavour to any table. 

ingredients

  • 80 mini sausages
  • 1 jar ginger preserve
  • 1/4 of that same jar of light soy sauce
  • Juice of one lemon 
  • a handful of freshly chopped coriander 

method

  1. If the sausages are still connected, snip them into separate little piggies. Place them into a large mixing bowl along with the jar of ginger preserve, then refill that jar 1/4 full with the light soy sauce. Add the lemon juice and coriander and mix well with your hands. Allow to marinade in the fridge for at least 4 hours, preferably overnight. 
  2. Preheat the oven to 220 degrees C/ 200 degrees C fan, and place the sausages onto a roasting tray, spaced evenly apart. Cook in the oven for 30 minutes or until burnished and cooked through.
